Three Ingredient Rum Cocktails.

Daquiri

This straight up daquiri allows the rum to shine and creates a crisp refreshing drink.

Chill your coupe glass whilst preparing your drink. Cut zest from your lime before juicing it. Add ice to shaker along with 50ml light rum, 15ml lime juice (freshly squeezed) & 10ml sugar syrup. Shake until chilled and strain into glass. Rub lime zest around rim and garnish with a wedge of lime.

Some people omit the sugar syrup and stir 2 spoons of finely ground caster sugar into the shaker. Stirring thoroughly (before adding the ice) until it has dissolved.

Caipirissima

This daquiri like drink is made in the style of the Caipirinha from Brazil. Containing lime, rum and sugar syrup as the Daquiri does this drink is constructed in a totally different way.

Take a lime and chop into quarters. Add 3/4s of them to a shaker and muddle to release the juice and the oils in the skin, add 60ml light rum and 15ml sugar syrup. Crush ice and add to the shaker. Shake. Pour without straining into a rocks glass.

Mr President

Adapted from a recipe made for Barack Obama, this cocktail should appeal to all campari fans who prefer the bitter side of cocktails.

Chill your coupe glass whilst preparing the drink. Add 37.5ml light rum, 22.5ml rosso sweet vermouth and 15ml campari to a shaker with ice. Stir to combine the ingredients and strain into your glass. Garnish with a twist of orange zest. Some people prefer this drink served in a glass with ice.
