Shake 45ml of dry gin with 15ml of freshly squeezed lime juice and 10ml of sugar syrup (optional) with ice. Strain into an ice filled tall glass and top with soda water. Garnish with a length of lime peel.

Add fresh mint leaves, 60ml dry gin, 25ml lime juice and 15ml sugar syrup to a shaker with ice. Shake and fine strain into a chilled coupe glass. Garnish with a mint leaf.
The French 75 – born in Paris where no such pesky government rules around alcohol existed so people were free to enjoy it to their hearts content. Gin, champagne and lemon juice combine to create a potent, lightly citrussy cocktail.
Add 45ml gin, 22.5ml lemon juice (freshly squeezed) and 22.5ml sugar syrup to a shaker with ice and shake vigorously for 20 seconds. Strain into a chilled flute, top with champagne and garnish with a lemon twist.
Gin featured heavily in speakeasy cocktail menus as it was a relatively easy spirit for amateur distillers to make on their own, ‘Bathtub gin’ was born of this era and well known for it’s potency. The addition of the sugar syrup and other flavours would have helped to mask the poor quality spirits that were available at the time.
